Bobbatlu Puran Poli – My 50th post

I can’t believe this is my 50th post!  Half century Hurray!!!! I am amazed!! Thank you to all my fellow bloggers, friends, readers for your sweet comments and thanks for reading my blog, And to my lovable hubby who is my food taster, encourages with his comments and helps me out in my cooking. And also to my sweet mom who suggests and guides me in my cooking.

I prepared Bobbatlu for 50th post – Andhra Special sweet which is my and my hubby’s favorite (he has many LOL!!!!). 

Bobbatlu is one of the traditional and delicious sweet prepared for festivals and occasions. In Andhra they call Bobbatlu and in Maharasta as Puran Poli. This sweet is very time consuming but it’s worth.  I learnt this recipe from my mom.



Ingredients:

Maida – 1 cup
Channa Dal – 1 cup
Jaggery – 1 cup
Cardamom powder – 1 tsp
Salt – a pinch
Oil/ghee

Preparation

  • In a bowl mix maida, salt , water and make smooth dough. Keep aside for 1 hour.
  • Wash channa dal and boil it in 3-4 cups of water until the dal becomes soft.
  • After it gets boiled, drain the water completely.
  • In the same vessel add jaggery and cardamom powder and mix well and make a smooth paste
  • Finally add ghee to it
  • Make this puran into round balls and keep aside
  • Grease your hands with oil and take a small portion of dough and spread it on a plastic cover and make a small round chapatti.

  • Place puran inside the little rounded chapatti and close it till the puram will not be visible
  • Using roll stick roll it like chapatti or we can use hand and spread it slowly by pressing it down until it forms a round like chapatti.
  • Now on pan put little ghee/oil and cook on low heat
  • Cook on both sides till it turns golden brown
  • Delicious Bobbatlu’s are ready. Serve these with ghee.

My Italian Grandmother goes Moroccan!

Well, that certainly would never happen if Nanny was still alive. She shunned all things not Italian unless it was Wonton Soup and Lo Mein. What can I say, she liked to stay true to her roots. I on the other hand am a little more adventurous. A year ago I went to Marakesh, a Moroccan restaurant for the first time. I really enjoyed it, the flavors were so different and the colors so vibrant. I thought about going back many times. Unfortunately, I am the only one in this two person household who had a desire to go back. I still wanted to get my fix so I searched high and low for a recipe that resembled my meal at Marakesh. I found a recipe at a blog called A Weight Lifted: Healthy Weight Loss Blog for Women Tired of Dieting. I wasnt looking for a specifically healthy recipe but if its healthy then why not? Right?

I made some changes and additions to the recipe so it would be closer to the meal I had at Marakesh. I think I need to improve on it slightly so it fits my taste a little more. I used this recipe as a guide and made the mistake of using the cooking time that was recommended but I forgot (silly me) that I cut the chicken smaller than the recipe stated because that is how I remembered it. Obviously, if you cut the chicken smaller its going to cook faster. Duh! I know this but I wasnt paying attention. The great thing is that once everything is sliced and diced this doesnt take a long time to make. I would absolutely consider it for a weeknight meal again. In the future I will leave out the zucchini. I love this vegetable in pastas and soups but it just didnt seem to pick up the flavors. A little too bland for me but there was zucchini in my dish at the restaurant. I also dont think I would use diced tomatoes. Maybe some tomato paste and chicken broth. Usually when I use diced tomatoes in a sauce they get very sweet. This didnt happen and the spices just didnt work for me. That could just be because my palate is not used to this. It doesnt mean that it didnt belong there.

A Tagine is a special clay pot with a cone shaped cover that is used in Moroccan cooking. Stew type meals that are cooked in these pots (like the meal I made) are also called Tagines. Now I dont have a traditional Tagine but I used my Le Creuset and it worked wonderfully. Any heavy pot with a tight fitting cover should work.

Tagine of Moroccan Recipes and Couscous

Ingredients:

2 tablespoons extra virgin olive oil
1 medium onion, chopped
2 cloves garlic, minced
1/2 teaspoon turmeric
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1 teaspoon salt
1 dash cayenne pepper
1 teaspoon smoked paprika
1 teaspoon cumin
1/2 cup chopped carrots
1/2 cup butternut squash, cut into 1- inch pieces
1/2 cup sweet potato, cut into 1-inch pieces
1 1/2 cups diced canned tomatoes
2 boneless, skinless chicken breasts, cut into 1-inch pieces
1 cup zucchini, cut in 1-inch pieces
3 tablespoons raisins
1 box Near East Couscous, any flavor you like, prepared as instruced on box


Directions:

Saute onions in oil until softened. Add garlic and all seasonings, stirring constantly for about 1 minute. Add carrots, sweet potato, butternut squash, tomatoes and enough water to cover. (Next time I will try using chicken broth and tomato paste or sauce instead.) Bring to a boil, cover and reduce to simmering. Let veggies cook for 10-15 minutes or until tender. Add chicken, raisins and zucchini, stir and cover. Let cook for about 5 minutes or until chicken is cooked through and zucchini is tender.

Meanwhile, cook couscous according to package directions.

Serve chicken and veggies on top of couscous.

My Nail Polish Addiction

I used to be obsessed with watching Dr. Phil in college. With topics like "Does Mother Know Best?" and "Girly Men", I couldnt get enough of all the crazy that the world had to offer. One of the segments I remember best was called "Is This Normal?" in which people would ask whether diapering their 6-year-old or eating in their sleep was considered normal. 

I bring all this up to ask you, Cupcult, is my nail polish collection normal?? I must own at least a few dozen polishes and I change my nail color about twice a week. Ive got so many polishes, I actually dont know how to store them anymore. Enter this bowl:
I procured this glass bowl from Gilt Group a couple weeks ago and got the genius idea to use it for nail polish storage. Smart, right? 

RIGHT?!?!
Since were on the topic of nail color, heres whats in my constant rotation lately:

4. Essie Mint Candy Apple, 5. Essie Ballet Slippers}

But I want to know: Is this normal?? How many nail polishes do you own? And how do you store them? And how often are you changing your nail color?? I need answers, and I need them now, before its too late.

My Next Cookery Show for Makkal TV

Badhusha – My 100th post Diwali Special

Hooray for my 100th post!! Wow what a journey it has been. I am so excited about this little milestone!!

I really never thought I can make these many kinds of recipes, but over the last 6 months, I have exposed a love to baking, tried many new recipes first time, organized some foodie events, and met so many inspirational and lovely bloggers of whom some have already became friends!! I love reading all your comments and you all inspire me to carry on.

I wanted to say a heartfelt thankyou to all my friends, followers, bloggers and readers. And I am very grateful to my sweet hubby who supports and helps in my cooking.




To celebrate this small milestone, I prepared badhusha. I learnt this recipe from Raks kitchen. 
Badhusha is an Indian festive Sweet made easily with available ingredients of flour and sugar. First time I made these Badhusha’s and I enjoyed making those shapes. They came out so soft and I and my hubby enjoyed them a lot.

Initially I taught it is very difficult to make, but when I decided to prepare I felt it is very easy and infact I made it on weekday after coming from work within 1 hour, enjoyed making them :)

Ingredients:

All purpose flour/Maida – 1 ½ cups
Butter – ¼ cup
Ghee – 8 tsps
Curd – 1 ½ tsp
Baking Soda – 2 pinches
Sugar – ½ tsp
Water – ¼ cup
Oil for deep Frying



For Syrup:
Sugar – ½ cup
Water – little
Elachi powder – ¼ tsp
Lemon juice – 1 tsp

Preparation

  • Melt butter in microwave and keep aside.
  • In a wide bowl, add ghee,sugar,baking soda,curd and whisk it to mix well.
  • Later add flour and mix well without lumps.

  • Add water slowly and mix well to make a smooth dough.
  • Keep the dough aside and covered it with wet cloth for 15 mins.
  • Boil water with sugar and elachi to make thick syrup. Remove from heat and keep aside.
  • Divide the dough into small lemon sized balls.
  • Take a ball, flatten slightly and twist the sides using fingertips decoratively and shape the edges.
  • Prepare all the balls and keep aside by covering them.
  • Heat oil in a frying pan.  Add some badhushas into oil. Remove from heat and let it cooked for 5 mins.
  • Later the badushas float on top, again switch on the heat and cook on medium flame for another 5 mins or till they turn golden color.
  • Drain them in paper towel and immediately put them into the sugar syrup for about 5 mins and serve in a plate.
  • Sprinkle nuts or dry coconut and serve !!
