Ingredients:
  • ½ kg beef boti boneless
  • 2 tsp ginger garlic paste
  • 3 medium sized onions
  • 2 tsp red chili powder
  • 1 tbsp all spice powder
  • 1 tsp salt
  • 4 boiled and mashed potatoes
  • ½ packet egg noodles
  • 1 bunch coriander leaves
  • 1 bunch mint leaves
  • 3 chopped chilies
  • 3 eggs
Method:
  • Boil beef boti with the above ingredients till its tender and mix well and forms a smooth mixture. Make sure it has no water in it.Then add potatoes, egg noodles, coriander, mint, green chilies and add eggs in it. Mix well till smooth and well combined.Shape into kababs and fry in the oil.

SOY GRANULES STUFFED BUNS

Ever since I saw Usha’s oats pav bread, I really got hooked on to her recipe. This is the second time I made them and I tried to add stuffing to the buns instead of having of them as pav. Thanks a lot Usha for this amazing bread. The stuffing I have used here is a side dish I made that day for our lunch. I stuffed the leftovers in the buns and voila..a tasty evening snack to go with tea. I am not posting the recipe for the bread since it is not my recipe. The only change I made in her recipe was that I used whole wheat flour instead of all-purpose flour, still the texture of the bread was not so dense compared to regular whole wheat bread. INGREDIENTS FOR THE STUFFING:

  1. Soya nuggets or granules around 1 cup.
  2. Onions, large-1.
  3. Ginger-garlic paste- 1 teaspoon.
  4. Chili powder.
  5. Fennel seeds-1 teaspoon.
  6. Garam masala (optional, tastes good even without garam masala).
  7. Salt, as per taste.

METHOD:

For the bread, mix the dough and let it rise for an hour. Take a cup of soy nuggets and put them in boiling water for 2 minutes until the nuggets are puffed up. Let the, sit for 5 minutes, then rinse them well, drain them, and cut into very fine pieces or they can be minced well using a blender. Take care not to make them into a paste, just one or two pulses in the blender will be fine. Chop the onions into small pieces. Heat a pan and add 1 tablespoon of oil. Add the fennel seeds and let them fry for a few seconds, then add the onions and sauté for a few minutes until the onions are caramelized. Add a teaspoon of ginger-garlic paste and sauté for a minute. Then add a tablespoon of chili powder, garam masala, and required salt and fry for everything for a minute on a low flame. Add around 3 tablespoons of water and add the soy granules and cook them closed on low flame around 5-8 minutes until they turn dry. Turn off the heat, add cilantro and let it cool.

After an hour, take the dough, make small balls of dough and flatten it very slightly in the palm. Add 1 to 1-1/2 teaspoons of stuffing in the middle of the flattened dough and fold the dough gently over the stuffing. Smooth the edges into a ball and make similar balls from the rest of the dough. Arrange them on a baking sheet sprayed with nonstick cooking oil. They can be arranged closely or apart. Bake them at 350 degrees for 20-25 minutes. Remove the buns from the oven, let it cool, and enjoy.

Polish Grandmothers and the Pure Joy of Pierogi

I like cheese, I love pasta, and I adore mashed potatoes, so you can image the pure bliss I experience when I get to eat pierogi. They very well may be my favorite non-meat food.

Pierogi are a classic Eastern European potato and cheese stuffed dumpling traditionally made for festivals and celebrations.

There are thousands of versions using different fillings, dough, and garnis
hes, but this one made for an About.com assignment is fairly typical.

Above and beyond the ingredients, there are also many different ways to engineer the dish. You can make a few big ones, or lots of tiny ones (guess which is easier). You can use lots of stuffing, or just a little. You can boil and toss in melted butter, or you can fry to get a crispy crust as I did here.

My grandmother Sophie, on my fathers side of the family, was from Poland, and every time we would drive to New York for a visit, the highlight of the trip was a big plate of her pierogi.

The fact that the trip was seven hours, in the back of a station wagon, in the middle of summer, with no air conditioning, with my father chain-smoking the entire trip, did nothing to diminish my joyous anticipation.

Hello Cupcakes Cupcake Decorating Class

You know those Dyson commercials with that guy and his gentle British accent, talking about innovations in vacuums and what-have-you? Cmon, sure you do. 

"I was picking up lint with my fingers from my carpet and I thought there has to be a better way!" 

The point is, the dudes whole shtick is about taking something ordinary and innovating upon it.Though cupcakes are nowhere NEAR "ordinary", itd be fair to say theyre prevalent. And in the world of cupcakes, Hello Cupcake is the real innovator. Theyve been churning out delicious varieties of cupcakes in their Dupont Circle location for a year and a half now, and in addition to extending their store hours to 7 days a week, theyve also started cupcake decorating classes!!!

I brought along my friend Anna and my two haute cupcake aprons for the class:

I had some difficulties at first

Once we got our surgical gloves on, we were ready to operate. Our first victim was fondant. Fondant is rolled icing, generally used on wedding cakes. Its like play-dough, except even MORE edible!! You gotta roll it out and cut shapes out of it.

If youre Anna, you accidentally shape it into a one-piece. And then you cut shapes in inappropriate places.

So after cutting out some hearts and "Is" and "Us", we then got to frosting. First we practiced on the table, then they handed us naked cupcakes and let us at it!

When we heard the promise of sprinkles, we demanded every kind they had!!! Who cares if this is a Valentines cupcake class?! I WANT THE YELLOW SANDING SUGAR RIGHT NOW OR I WILL FREAK OUTTTTT!!!

When it was all said and done, we ended up with 9 of our own hand-decorated cuppies. But since they dont make a 9-holed cupcake box, we also got to pick three from their bakery case. 

I decorated the top two rows and the strawberry-topped cupcake. 

The 2-hour class was $50, which is a pretty good deal when you think about it. A dozen cupcakes is $36, so what that means is the class itself is $14. Looks like theyre upping the price to $70 from here-on-out, though;  not too bad, especially if youre one of those people who just slathers icing on with a butter knife and could really use the help, PK!!!

Theyre planning more classes throughout the spring, including St. Pattys Day and Cherry Blossom themed cupcakes. 

My only real advice--make plans the weekend you do this. Otherwise, youll find yourself trying to scarf down your 8th cupcake in the span of 16 hours. Did I do that? Look, Id rather not talk specifics, but I will say this is one case where you truly can judge a book by its cover. And its delicious.

Chakkarai pongal or Sarkkarai pongal sweet Rice

This Rice is the queen of pongal.The idea of making this pongal on the first day of Thai month, was to make a sweet first out of the newly harvested rice. Now time has changed. Agriculture is no more the main occupation of many. But we continue to celebrate the function with some raw rice we get in the store.To our future generations we should try to explain the importance of this function to the farmer and the agriculturists
In those days pongal was kept outside the house in the open for sun God. Now in our system of living we can’t do that and we have ended up in making pongal in the pressure cooker in our kitchen. Till today, I have managed to make pongal on the pongal day in the pongal panai in the dining room keeping the gas stove down .But in this method there is a risk of pongal getting burnt if we are not careful. So I advice the younger generation to make it in the cooker itself which is a safe and sure method
Ingredients
Raw rice-1 cup
Grated jaggerry-1 cup
Broken green gram-handful (pasiparuppu)
Ghee 3 table spoons
Cashews-10
Raisins-handful
Powdered cardamom-1 teaspoon
Procedure
Wash the rice and pasiparuppu and cook in the pressure cooker with 3 cups of water in medium fire for 10 minutes. Meantime dissolve the jaggerry in a cup of water in the stove. Strain it using a stainless steel strainer .Keep it back in the stove and bring the mixture to a boil for 2 minutes. After the pressure goes open the cooker. Smash the rice nicely with a flat ladle. Slowly pour the jaggerry water into the cooker mixing well .Switch on the stove now and in low fire mix everything nicely. Switch off the stove in 2 minutes. Remember the pongal will solidify once it cools. If you want you can add little milk also instead of water while cooking rice.
In a small frying pan, in a tablespoon of ghee fry the cashews after breaking it into small pieces in low fire. Add this also into the cooker. Fry the raisins also and along with that ghee add everything into the pongal. Add the cardamom powder and a tablespoon of ghee and mix well. Your pongal is ready .While serving you can use the remaining 1 tablespoon of ghee

Kichidi with Chana Dal

Kichidi.....this is well known to every one....the ease of making it made it very popular item on a lazy holiday. It do not require and side dish, making is simple, tastes very good, fills the stomach, thats all. I prefer making this on weekends, its our regular holiday brunch. I love it, my hubby love it too (this is important ;)!!!!!!!!!
Here is the recipe, Some make i with moong dal / Green lentils but my hubby loves it with chana dal
















Ingredients:
Basmathi Rice/ regular rice- 3 cups
Chana Dal (split gram dal)-1/2 cup
you can use vegetables you like but remember to chop them into large pieces
Carrot slices- 1/2 cup
beans chopped-1/2 cup
Green peas-1/4cup
cauliflower florets- 1cup
green chili-2 cubed
Onions chopped-1/2cup
Spices:
cloves-4
Elachi / cardamom-3 cloves
Cinnamon stick- 1big
Bay leaves / biryani leafs -2 big
Sajeera / Jeera/ cumin seeds-1/2ts

Nuts, mint leaves, cilantro-  (optional)
Ginger garlic paste-2ts
vegetable oil/ ghee/ butter-3-4ts
Salt to taste
Water for cooking
Method:

  • Wash and soak rice and chana dal in water, for 1 cup of mixture add 2cups of water (1:2 ratio) and add 1ts of table salt and keep it aside.
  • Now take a thick bottom skillet and add 3-4ts of olive oil / butter / ghee/ vegetable oil to the skillet and heat it.
  • Add all the spices cloves + cinnamon + cardamom + bay leaves +jeera and  wait until they splutter, always remember to cook spices in medium flame.
  • Then add ginger garlic paste and cook until the raw flavor vanishes.
  • Toss in all vegetables and stir it well.
  • cook until they are half done by closing the lid.
  • Now add this mixture to soaked rice and cook just like a normal rice in a rice cooker or pressure cooker.
  • I love enjoying this with raita, but it does not require any side dish.

I can’t believe tomorrow is St. Patricks Day! Seems like just yesterday I was shoveling snow at my mothers house. Anyway, its too late to do any new Irish-inspired recipes, so Ill do the next best thing and post links to these three delicious videos (click on the recipe captions, and away you go).

By the way, any Irish drinking jokes you may hear in these clips were only meant to offend my Irish friends and family members, and not the general Irish-American community. Having said that, most of them will be too drunk to care tomorrow, so I guess it really doesn’t matter. Erin go Bragh!
