Home Made Buns


Ingredients:
1.       2.5 (2  and 1/2 ) cup bread  flour
2.      2 teaspoon active instant dry yeast
3.      2  tablespoon oil or melted butter
4.      2 teaspoon sugar
5.      1/2 cup lukewarm milk (vegan choice soya milk)
6.      1/2 cup lukewarm water
7.      1/2 teaspoon salt
8.      1/4 lukewarm water as needed
Method:
1.      Mix the water, milk and sugar in large bowl.
2.      Sprinkle the yeast in top of the milk mixture cover and keep a side for ten minutes.
3.      Take one another large bowl and add the flour and Oil and mix well.
4.      After ten minutes to bring all together.
5.      Take the dough out on lightly floured surface and knead for 6 to 8 minute, if you needed add little water (make smooth dough).
6.      Let the dough rest for 2 hours in an oiled bowl, cover with kitchen towel to prevent from dough skin.
7.      After 2 hour it will have been double in size.
8.      Take out air from the dough by patting with the help of hand.
9.      Divide the dough 8 portions and spread each portion out in a round shape.
10.  Put all rounds in rectangle or round greased pan.
11.  Cover the pan with kitchen towel and leave them to rise for another 1 hour.
12.  After 1 hour again double in size.
13.  Bake in a preheated oven at 200º C. For 20 to 22 minutes.
14.  Brush the top with melted butter.
15.  Let it cool down completely.
Tips: 
* Kneading the dough is a necessary step in the bread(buns) making process.

* Usually a dough goes through two rising periods, the first after mixing and the second after shaping.

* When the loaf starts its second rise after shaping, it is a good time to PREHEAT the OVEN about before 15 minutes.

Guacamole recipe How to make Mexican Guacamole at home


Guacamole Picado
Guacamole Picado is a famous Mexican dip or a side served with tortilla chips or with any main course. Guacamole Picado is made with Avocados( called as butter fruit in India), onions, tomato and garlic etc. Picado means chopped in Spanish, here the ingredients are chopped finely, mixed and served. Here goes the simple and home made recipe of Guacamole

Ingredients
Onion small finely chopped- 1 no
Green chilies finely chopped- 3 nos( you can use 2 Serrano peppers and 1 Jalapeno)
Tomato medium remove seed and finely chopped- 1 no
Garlic clove minced- 1 no
Fresh coriander leaves chopped- 1 tbsp
Avocado ripe- 3 nos
Salt- 1/2 tsp
lime juice from 1/2 fruit
Home-made Guacamole
Method
Remove the seed and scoop out the flesh from the avocados, chop coarsely and place it in a bowl. Add chopped onion, chopped tomatoes, chopped green chilies, minced garlic, chopped coriander leaves, lime juice and salt to the avocados. Mix well everything in the bowl with a fork until avocados are mashed and well blended with other ingredients. Serve with warm tortillas or with tortilla chips.

( Note: for Desi touch I spread Guacamole on dosa, bread slice and chapati which tasted very good).

Hello from New Orleans! Home of Americas Safest Seafood

Just wanted to say a quick hello from New Orleans. So far everythings been really delicious (like this wonderful gumbo and etouffee trio I enjoyed at M Bistro), and the chefs Ive chatted with report no problems keeping up with their customers Gulf seafood cravings.

Catches are being tracked using GPS to ensure theyre coming from unaffected areas, and in addition, random samples are being taken twice a day to add another level of protection. As M Bistros Chef Matt Murphy said, "We want people to know its never been safer to eat seafood in New Orleans, than it is right now."

So, ironically, due to the post-spill scrutiny, visitors to New Orleans may actually be enjoying some of the safest seafood in the country. Stay tuned for more information about the trip when I return. Now, its time to go do some more "investigating."
