SANDRAS PERFECTLY ROASTED TURKEY with HOMEMADE MOIST STUFFING

Ive provided options to either stuff the turkey,
and/or  bake the dressing separate,
as many people have varying opinions regarding this...
Servings: (8 to 10)
Prep: 30 Mins. |
Bake: 3-1/2 Hrs. |
Stand: 15 Mins.

Posted by Sandra

INGREDIENTS

***Stuffing
1/2 cup butter
1 medium onion, chopped
2 stalks celery, chopped
Dressing as its called, or stuffing if you choose to do so inside the turkey
8 crimini mushrooms, chopped
4 cloves garlic, minced
2 teaspoons kosher salt
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon sage
1 teaspoon ground pepper
1/2 teaspoon savory
2 tablespoons dried parsley
1 tablespoon poultry seasoning
8 cups stale whole-wheat bread, broken into one-inch pieces
3 to 4 cups poultry stock (depending on how moist you like your dressing)

***Turkey
1 (10 to 12-lb.) turkey, giblets removed
light olive oil, to rub on skin
kosher salt and ground pepper, to taste

METHOD

Melt butter in large skillet and add all ingredients except the bread and stock. Cook over medium heat until onions are soft. Pour into a large mixing bowl. Add the bread and stock and mix well using clean hands, or if you prefer a large spoon. Let stuffing cool.

Preheat the oven to 350 degrees.

Meanwhile, place the turkey into a large bowl (for easier handling) neck side up, and remove giblets (I save these for the gravy). Rub the bird with oil. When stuffing is cool, fill both the main turkey cavity and neck cavity with stuffing. (*and/or bake remaining or all of dressing in a dish as outlined below). Place the turkey into a roasting pan, on a rack, and season with salt and pepper. Place the roasting pan on the middle rack of the oven. Roast for 3 hours while basting on the hour, and then increase the heat to 450 degrees and cook for another 30 minutes, or until the thigh reaches 180 degrees and/or meat in the breast reaches 170 degrees (please do not let thermometer hit the bone to ensure correct readings). Remove from oven, and lightly tent with foil and let rest for 15 minutes for juices to redistribute. Remove the stuffing to a large bowl, carve the roasted turkey, and serve immediately. – Enjoy!

~~~~~~~~~~~~~~~
*To bake dressing in pan: Preheat oven to 350 degrees. Spray a 13”x9” baking dish. Transfer stuffing to prepared dish. Cover with buttered foil and bake until heated through, about 45 minutes. Uncover and bake until top is golden brown, about 15 minutes.
**If you choose not to stuff the turkey, the roasting time will be less ~ be sure to keep an eye on your thermometer!!
SANDRAS CRANBERRY SCONES
Feel free to add any berries, fruit, nuts, and so on
to your hearts desire...
Servings: (8)
Prep: 15 mins. |
Cook: 15 mins.
INGREDIENTS
-2 cups all-purpose flour
-1/3 cup sugar
-1 teaspoon baking powder (I use double-acting)
-1/4 teaspoon baking soda
-1/2 teaspoon salt
-8 tablespoons butter, frozen
-1/2 cup sour cream
-1 large egg, beaten
-1/2 cup dried cranberries (or any other dried fruit)
Sprinkle Scones before baking with:
-1 teaspoon raw sugar (or regular sugar)
METHOD
Preheat oven to 400 degrees.
In a food processor bowl, add the flour, sugar, baking powder, baking soda and salt. Grate butter into flour mixture using the large holes of a grater; pulse a few seconds to blend. Add the sour cream and egg, and pulse a few seconds to blend. Add the dried cranberries and pulse just until dough pulls away from sides (do not over process, as dough should not be totally smooth!).
Place dough ball on a lightly floured surface and pat into an 8-inch circle, about 3/4-inch thick. Sprinkle with 1 tsp. raw sugar. Use a sharp knife to cut into 8 even triangles; place scones on a cookie sheet lined with parchment paper, about 1 inch apart. Bake until golden, about 15 minutes. Cool for 5 minutes and serve warm.
with your favorite main dish will be utmost satisfying...
Servings: (2)
Prep: 5 Mins. |
Bake 30 Mins.
INGREDIENTS
1) Par-Bake in Microwave
1 large russet potato, scrubbed and pierced
2) Finish Baking in Oven
baking spray
pinch of garlic powder
pinch of onion powder
3) Baked a Final Time Stuffed
1 strip bacon, cut into ½” strips
2 tablespoons spanish onion, chopped
1 small clove of garlic, minced
3 tablespoons frozen broccoli florets, thawed, and chopped
3 tablespoons sour cream
2 heaping tablespoons cheddar cheese, grated
kosher salt and ground pepper to taste
***Topping
--2 tablespoons cheddar cheese, grated
METHOD
Preheat oven to 350 degrees.
Scrub and pierce potato, and par-bake in microwave on high for 5 minutes. Carefully remove from microwave (it’ll be hot), and place on a sheet of tin foil. Spray the potato all over with baking spray, and sprinkle lightly with garlic and onion powder all over, then roll up and place in preheated conventional oven for 15 minutes.
Meanwhile, place a medium skillet over medium-heat, and brown bacon until crispy. Remove bacon to a paper towel lined saucer, reserving drippings. Add the onion to skillet, and saute until translucent. Add the garlic and saute for 30 seconds. Add the broccoli, sour cream, 2 tablespoons cheddar cheese, and kosher salt and ground pepper, to taste, and remove from heat.
Remove the potato from the oven, unwrap from tin foil, and using tongs cut the potato in half lengthwise. Using a tablespoon, scoop out flesh while leaving ¼” of the walls of the potato intact. Place the scooped out potato flesh into skillet, and mash the mixture with a fork, then stir to combine. Generously stuff the potato halves with the filling, and top with remaining cheddar cheese, and bake on a foil-lined baking sheet for 12 to 15 minutes, until warmed through and cheese on top has melted. Remove from oven, and sprinkle with crispy bacon. - Enjoy!
INGREDIENTS:
***Bean and venison sausage stew:
1 lb. ground venison sweet italian sausage
1 spanish onion, finely chopped
2 cloves garlic, minced
5 cups low-sodium chicken broth
1 cup beer, (I use Alaskan Amber), or dry white wine, or more broth
1 (14.5 oz. can) diced tomatoes, undrained
2 (14.5 oz. cans) of cannellini beans (white beans), drained and rinsed
3 tablespoons balsamic vinegar
Freshly ground pepper to taste
***Bread topping:
2 tablespoons butter, melted
¼ cup fresh parmesan cheese, grated
¼ cup seasoned breadcrumbs
1 tablespoon finely chopped fresh flat-leaf parsley
--Prepared warm crispy bread or cornbread
METHOD:
***Prepare the bean stew:
In a large high-sided skillet, heat to medium-high heat.  Add the ground venison sausage, onion, and sauté until sausage is browned. Add the garlic and sauté for 30 seconds longer. Add the broth, beer, drained tomatoes and beans. Bring to a simmer, cover, and cook for 20 minutes. Smash half of the beans with a masher to create a creamy consistency.  Add the balsamic vinegar, and ground pepper, to taste; cooking, uncovered, for 3 minutes longer.
Preheat the broiler.
Transfer the stew evenly among six ovenproof ramekins.
***Prepare the topping:
In a small bowl, combine all the topping ingredients, and sprinkle evenly over the top of the stew in each ramekin. Place ramekins on baking sheet, and broil in the oven, just until the breadcrumbs are slightly browned, 2 to 3 minutes (watch carefully so the topping does not burn). - Enjoy!
SANDRAS ADDICTING MUSHROOM and JALAPENO POPPERS with BACON
A perfectly addicting 2-for-1 side dish/appetizer youre able to serve
 hot out of the oven or at room temperature.
Dont wait for game day to enjoy all such deliciousness...
Prep: 20 Mins.
Bake: 30 Mins.
Yields: (14 Mushrooms-7 Halved Jalapeno Poppers, with 1 jalapeno half being chopped to add to filling)
INGREDIENTS
14 medium fresh button mushrooms, stems removed; reserve stems
4 large (4" long) fresh jalapenos, stems removed, including half of the ribs and seeds after cutting in 1/2 lengthwise
--(Remove more or less ribs/seeds to your desired level of spiciness)
2 strips center-cut bacon, sliced into 1/2" pieces
1 teaspoon granulated garlic
1 (8 oz. tub) cream cheese, at room temperature
1/2 cup medium shredded cheddar cheese
2 tablespoons grated parmesan cheese
2 green onions (both green and white parts), finely sliced
1 teaspoon fine-grain sea salt
1/2 teaspoon freshly ground pepper
1 tablespoon dry Italian seasoned bread crumbs
METHOD
Preheat oven to 350 degrees. Place a rack over a foil-lined baking sheet, spray rack, and set aside.
Clean mushrooms with a damp paper towel. Carefully remove stems from mushrooms; set caps aside. Finely chop stems.
Cut stems from jalapenos, and toss. Remove half of the ribs and stems, more or less; set aside 7 halves.
Finely chop 1 half of a jalapeno, and set aside. [Remember to wash hands using hot water and soap!]
Place medium skillet over medium heat and saute bacon pieces until slightly crisp and brown.
Add chopped mushroom stems and granulated garlic to skillet with the bacon, and continue sauteing for 2 additional minutes. Remove skillet from heat and set aside for mixture to cool.
Meanwhile, in medium bowl add the finely-chopped reserved jalapeno, cream-cheddar-parmesan cheeses, green onions, sea salt and freshly ground pepper. Add the cooled mixture from skillet, including drippings; mix to incorporate.
Using a teaspoon, generously fill mushroom caps. Fill jalapeno halves so they are level with sides of peppers. (See photo below.) Lightly sprinkle filled mushroom caps and jalapeno pepper halves with Italian seasoned bread crumbs.
Place filled mushroom caps and jalapeno peppers (with cut jalapeno ends flush against each other to ensure filling remains intact during baking) on sprayed rack of prepared baking sheet.
Bake in preheated oven for 30 minutes, until tops are golden and mushrooms and jalapenos are hot but still crisp-tender (not mushy). ~ Enjoy!
Hot out of the oven...
~~~~~~~~~~~~~~~~~
Tips: The beauty of this side dish/appetizer is that you can prepare the poppers well ahead of time, simply place in refrigerator until ready to bake.

Feel free to alternatively grill these poppers, just place the same baking rack (shown above) on top of barbecue grilling rack over indirect heat (using charcoal), covered, for the same amount of cooking time.
