Chicken cheese croissants

Chicken cheese croissants


Ingredients
  • Chicken boneless 1 cup thinly sliced
  • Salt, pepper, mustard ½ tsp each
  • Ginger garlic paste ½ tsp
  • Wooster sauce 1 tbsp
  • Ketchup 2 tbsp
  • Croissants 2
  • Cheese slices 2
  • Mayonnaise 2 tbsp
  • Lemon juice 1 tbsp
  • Pickled cucumber sliced 4
  • Cabbage 2 tbsp thinly sliced
  • Oil 2 tbsp
Method
  • Marinate thinly sliced chicken with salt, pepper, mustard, ginger garlic, ketchup and Wooster sauce, heat 2 tbsp oil pan fry chicken for 5 minutes, remove and keep aside, cut croissants in half keep a slice of cheese, grill for 2 minutes till cheese melts, put chicken filling with cabbage mixed with mayonnaise, topped with pickled cucumber, cover with top of croissants, serve hot.

Spicy Orange Chicken Wings Its Not a Party Until the Panda Wings Come Out!

Here they are – easy and delicious, spicy orange chicken wings, cleverly named (according to me anyway) after the spicy orange chicken served at Panda Express. By the way, this recipe has nothing to do with killing, riding, eating, rubbing, growing wings on, or otherwise abusing panda bears.

We are right smack in the middle of chicken wing eating season, and with the Super Bowl just around the corner (Go Jets!), I figured it was high time for a new wing fling. The recipe could not be simpler to make, and if you can somehow manage to whip up a batch of these oven-fried chicken wings to glaze, youll be in sticky-finger-heaven.

Since this was my first time trying this, I went very basic, and was extremely happy with the results. It was very similar in taste and texture to the Panda orange glaze, and done so with no gloppy cornstarch, which is not very nice cold.

Next time I will try the additions of ginger and garlic, and maybe some toasted sesame seeds. In the meantime, I really hope you give these a try, and please let me know how your particular variations come out. Enjoy!



Spicy Orange Chicken Wings Ingredients (enough for about 5 lbs of wings):
2 big tablespoons Sambal, or other Asian-style chili paste to taste, or may sub red pepper flakes to taste
1 cup orange jam or marmalade, (strain if contains an excess of orange rind pieces)
1/3 cup rice vinegar
1/4 cup hoisin sauce
1 tablespoon soy sauce
"oven-fried" Buffalo chicken wings
Suggestions for optional additions:
finely minced garlic cloves
finely grated fresh ginger, optional
minced green onions
toasted sesame seeds

Chicken fajita roll

Chicken fajita roll


Ingredients for filling
  • Chicken thinly sliced 2 cups
  • Garlic paste 1 tsp
  • Lemon juice 2 tbsp
  • Crushed cumin 1 tsp
  • Salt 1 tsp
  • All spice ¼ tsp
  • Black pepper ½ tsp
  • Crushed coriander 1 tsp
  • Hp sauce 1 tbsp
  • Wooster shier sauce 1 tbsp
  • Oregano leaves 1 tsp
  • Tomato 1 Julian
  • Onion 1 cut into thick rings and then into halves
  • Capsicum 1 Julian
Method for filling
  • Marinate chicken with Garlic paste 1 tsp, Lemon juice 2 tbsp, Crushed cumin 1 tsp, Salt 1 tsp, All spice ¼ tsp, Black pepper ½ tsp, Crushed coriander 1 tsp, Hp sauce 1 tbsp, Wooster shier sauce 1 tbsp, Oregano leaves 1 tsp heat 2 tbsp oil, fry marinated chicken for 5 minutes add all sliced vegetables, fry for another 5 minutes, remove and keep aside, spread 1 cooked tortillas, spread with filling, roll tightly, serve wrapped in butter paper with fries, tomato rings, lettuce Julian, salsa and sour cream in two small bowls.
Ingredients for tortillas
  • Flour 2 cups
  • Salt 1 tsp
  • Baking powder 1 tsp
  • Oil 1 tbsp
  • Warm water to knead
Method for tortillas
  • In a bowl mix together Flour 2 cups, Salt 1 tsp, Baking powder 1 tsp, Oil 1 tbsp mix and knead with warm water into a medium dough, divide into 4 balls roll each ball into a 10 inch round on a floured surface, cook over medium heat on a tawa till done.
Ingredients for sauce
  • Onion chopped 2 tbsp
  • Capsicum chopped 2 tbsp
  • Oil 2 tbsp
  • Garlic paste ½ tsp
  • Salt ½ tsp
  • Tomato paste ½ cup
  • Ketchup ½ cup
  • Chili powder 1 tsp
  • Hot sauce 2 tbsp
  • Oregano ½ tsp
  • Coriander powder ½ tsp
  • Cumin powder ½ tsp
Method for sauce
  • Heat oil add garlic and onion, fry for 1 minute add capsicum, salt, chili powder, coriander powder , cumin powder, tomato paste, ketchup, oregano leaves, hot sauce add ½ cup water cook till sauce thick.
Ingredients for sour cream
  • Cream ½ cup
  • Yogurt 2 tbsp
  • Mayonnaise 1 tbsp
  • Garlic paste ½ tsp
  • Lemon juice 1 tbsp
  • Salt pinch
  • White pepper pinch

Sweet Balsamic Grilled Chicken Strawberry Pie


Sweet Balsamic Grilled Chicken

3/4 cup balsamic vinegar
1/2 olive oil
2 tbs chopped fresh rosemary
3 garlic cloves, chopped
1 tsp crushed red pepper flakes
2 tsp honey
6 boneless skinless chicken breasts

In a bowl combine the balsamic vinegar, olive oil, rosemary, garlic, red pepper flakes, and honey. Pour it into a gallon storage bag.  Add the chicken and allow it to marinate for at least 2 hours and up to overnight.  Rotate the bag occasionally to ensure the chicken gets marinated evenly.   Remove the chicken from the bag.  Discard the marinade and pat the chicken dry with paper towels.  Then season both sides of the chicken well with salt and pepper.  Grill the chicken over a medium hot fire for about 10 minutes on each side or until it is cooked through.


This chicken was delicious, moist and very tasty.  I served it with baked potoato and a selection of salad vegetables. The dressing for the vegetables was a simple French Dressing made using Fig Vinegar that I got when I was on holiday.  It is really delicious and quite a different taste, not a taste of figs at all, just a sort of fruity taste, but not as sweet as raspeberry vinegar.

I followed this with a Strawberry Pie, I found this great recipe on All Recipes, its so easy and the result not only looks good, but also tastes great.

Chipotle Maple Chicken Wings

I love to try different flavor combinations with chicken wings.  Right now my current obsession is with sticky sweet and hot sauces and the combination of maple syrup and chipotle chilis works perfectly together.  It was  a delicious, albeit junky, treat to eat while watching my favorite Thursday night show, Survivor. 

It an effort to keep my kitchen tidy and not make a huge mess frying the chicken wings, I cooked them at 425 degrees for about 40 minutes, turning them once.  They really get just as crispy as they do when you fry them and they are little less artery clogging. 

For the sauce I simmered about 1/4 cup of real maple syrup with 2 tablespoons of chipotle chili puree, and 1/4 cup of cider vinegar until it reduced and turn thick and syrupy.  When the chicken wings come out of the oven, toss them into a large mixing bowl.  Add 3 tablespoons of butter to the sauce, off the heat, and stir to combine.  If you add the butter to the sauce while it is boiling, the butter has a tendency to turn the sauce greasey. Pour the wing sauce over the chicken pieces and toss well.  Serve with celery, carrots and ranch dressing.

Roast chicken

Ingredients
  • Chicken 1 kg cleaned
  • Ginger garlic paste 1 tbsp
  • Salt 1 ½ tsp
  • Crushed black pepper 1 tsp heaped
  • Mustard powder 1 tsp
  • Lemon juice 2 tbsp
  • Ketchup 4 tbsp
  • Chili garlic sauce 2 tbsp
  • Worcestershire sauce 1 tbsp
  • Boiled vegetables 1 cup
  • Baby potatoes 10 to 12 peeled and deep fried
Method
  • Prick the chicken well and marinate with Ginger garlic paste 1 tbsp, Salt 1 ½ tsp, Crushed black pepper 1 tsp heaped, Mustard powder 1 tsp, Lemon juice 2 tbsp, Ketchup 4 tbsp, Chili garlic sauce 2 tbsp, Worcestershire sauce 1 tbsp.Tie the legs of the chicken with a rubber band, heat ¼ cup oil in a pan add the marinated chicken fry well on both sides when light golden add in the left over marinade with half cup water, cover and cook on low flame till the chicken is tender. Serve chicken roast with fried baby potatoes, boiled seasonal vegetables.

CHICKEN PATTIES

½ kg chicken mince


2 cups breadcrumbs

3 eggs beaten

3 onions chopped finely

1 tablespoon chopped coriander leaves

Salt to taste

1 teaspoon pepper powder

½ teaspoon spice powder ( garam masala powder)

6 tablespoons oil



Heat 2 tablespoon oil in a pan and sauté the onions lightly. Add the chicken mince and a little salt and cook till the chicken is cooked. Remove from heat then mix the chicken with the breadcrumbs, chopped coriander leaves, beaten eggs, salt, pepper and spice powder. Mix well then form into small round patties. Heat the remaining oil in a flat pan and fry the patties on medium heat till golden brown on both sides

CHICKEN BAKED POTATOES and CHICKEN AND DUMPLINGS

This weekend was cold, rainy, gloomy and leaf-less; without falls bright yellow leaves everything looks so dreary. Weve had several hard freezes and the snow line on the mountain behind our house is creeping very near; it wont be long. To celebrate the completion of our annual "winterizing", we decided to enjoy a lazy weekend. Saturday, I put chicken breasts and veggies in the crockpot and at dinner time, I just thickened the broth and served it on split baked potatoes.


4 boneless, skinless chicken breasts
3 cups chopped veggies
½ cup chopped onion
1 cup chopped celery
1 cup chopped carrot
4 cups good quality chicken broth (not bullion)
pinch of dried thyme
pinch of poultry seasoning
pinch of dried basil
½ teaspoon black pepper
1 teaspoon salt

Saute onions in a little butter until they mellow, then put everything in the crockpot and cook on low for about 6 to 8 hours (check for chicken tenderness at 6 hours). You want the chicken to be nice and "fall apart" tender. Thicken broth and serve over large baked Yukon gold potatoes that are cut in half.

DAY TWO

On Sunday, I used the crockpot leftovers for another lazy day meal:

CHICKEN AND DUMPLINGS
 

My mother made wonderful chicken and dumplings, so our Sundays dinner was a trip down memory lane for me...Hubby, not so much. He courageously gave the dumplings a taste then gave me one of those squinty "I dont think so" glances and politely moved the dumplings over to the side of the bowl and ate everything else. Oh well, I enjoyed them thoroughly.


In a saucepan, cook 3 diced potatoes in seasoned (salt & pepper) chicken broth. Add them to the crockpot leftovers. For chicken and dumplings you want a liquid that is the consistency of gravy. If your leftovers seems to thick, add just a little bit of the chicken broth you boiled the potatoes in. If it seems too thin, thicken it with a little bit of corn starch slurry. When your gravy is the right consistency, bring it to a strong simmer.

Dumplings
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon chicken bullion granules
2 tablespoons melted butter
3/4 cup milk
pinch of poultry seasoning

Mix everything JUST UNTIL MOISTENED and let it sit for about 5 minutes. Drop heaping teaspoons of dumpling mixture onto the SURFACE of the simmering gravy. Put a TIGHT FITTING lid on the pan and cook for 15 minutes (do not peek). At the end of 15 minutes, test the dumplings for doneness with a toothpick. If they are not cooked thoroughly, put lid back on and cook another 5 minutes. Spoon gravy over dumplings before serving.

Ingredients:
  • Whole chicken 1
  • Lemons 4
  • White vinegar ½ cup
  • Crushed black pepper 1 tbsp
  • Ginger powder 2 tbsp
  • Soya sauce 2 tbsp
  • Oil 4 tbsp
  • Salt to taste
Method:
  • Put cuts on chicken. Wash it and add in ½ cup white vinegar, 2 tbsp chopped ginger, salt, 4 lemon juice, 1 tbsp crushed black pepper and 2 tbsp soya sauce. Keep it for half an hour. Put the marinated chicken in the wok and brush 2 tbsp oil and 1 tsp roasted and crushed cumin. Simmer it chinioti steam chicken is ready.

Ingredients
  • Boiled gram lentil 125 gm
  • Chicken mince ½ kg
  • Onion 2
  • Green chilies chopped 2
  • Mint leaves ¼ bunch
  • Coriander leaves ¼ bunch
  • Carrot 1 medium piece
  • Flour 2 tbsp
  • Corn flour 2 tbsp
  • Egg 2
  • Crushed red pepper 1 tsp
  • Black pepper powder ½ tsp
  • All spice powder ½ tsp
  • Salt to taste
  • Lemon juice 1 tbsp
  • Oil for fry
Method
  • In a bowl put together boiled gram lentils, chopped onion, half of the mint leaves, half of the coriander leaves and chopped green chilies. Mix very well.Then add salt, crushed red pepper, all spice powder and lemon juice. Mix well and keep aside.In chopper put together chicken mince, chopped onion, chopped carrot, salt to taste, remaining coriander & mint leaves, black pepper, flour, egg and corn flour. Chopperize finely and then remove in a bowl.Now spread a little mince mixture in your hand, top with boiled lentil.Fold and make in a balled stuffed with boiled lentils.Lastly dip each ball into beaten egg and deep fry till golden brown. Remove from oil and serve as appetizer.

Ingredients:
  • 1 kg chicken wings
  • 2 cups flour
  • 2 tbsp corn flour
  • 1 egg
Sauce:
  • 3 tbsp brown sugar
  • 3 tbsp Wooster shier sauce
  • ½ cup ketchup
  • 2 tbsp honey
  • 3 tbsp chili sauce
  • 2 tbsp lemon juice
  • 2 capsicums
Method:
  • Dip the chicken wings in egg, roll it in flour and corn flour and deep fry them.
  • For sauce heat brown sugar, Wooster shier sauce, ketchup, honey, chili sauce and lemon juice and cook for some time.Add capsicum and stir fry a bit.Add wings in the sauce and serve in a serving dish.

Chicken Salad



Ive never made chicken salad before this weekend.  I dont know why, maybe its because Im not a big fan of tons of mayonaisse.  I dont mind a little on my sandwich but potato salads that have a ton of it or tuna that is swimming in it, I dont know, it grosses me out.  This definitely has mayo in it but its cut by sour cream and its so much better than all mayo.  Trust me.  The chicken is roasted instead of poached and what a difference it makes.  Throw in some extra breasts and save the chicken for other recipes.  I did and its come in handy already. The recipe is by Ina Gartens and I made a couple of small changes.  Ill post what I did here and you can click on the link for the original recipe.


Chicken Salad

Ingredients:


2 split (1 whole) chicken breasts, bone in, skin on (1 1/2 pounds)
olive oil
Kosher salt and freshly ground black pepper
1/2 cup pecan halves (or walnuts)
2 stalks celery, diced
1/2 cup light mayonnaise
1/2 cup light sour cream
1 tablespoon dijon mustard
1 tablespoon chopped fresh parsley
¼ cup scallions or chives
1 cup green or red grapes, cut in half
Lettuce leaves, for serving

Directions:

Preheat the oven to 350 degrees F.

Place the chicken breasts, skin side up, on a baking sheet and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, until the chicken is cooked through. Set aside until cool.

When the chicken is cool, remove meat from the bones and discard the skin and bones. Shred the chicken with two fork or with your fingers.
Meanwhile, toast the pecans in a pan and set aside to cool.

For the dressing, mix together the mayonnaise, sour cream and mustard.  Add salt and pepper to taste . Fold in parsley and chives.

Place the shredded chicken in a bowl, add the pecans, walnuts and grapes. Pour the dressing over the chicken and toss well.  Serve on a bed of lettuce leaves.

Ingredients
  • Chicken boneless cubes ½ kg
  • Ginger garlic 2 tsp
  • Salt 1 tsp
  • Chili powder 1 tsp
  • Allspice 1 tsp
  • Turmeric ½ tsp
  • Yogurt ½ cup
  • Orange color pinch
Ingredients for rice
  • Rice ½ kg soaked for 30 minutes and boiled with salt until done.
  • Oil ¼ cup
  • Chopped onion 2 tbsp
  • Brown onion ½ cup
  • Ginger garlic 1 tbsp
  • Chopperized tomatoes 2
  • Salt ½ tsp
  • Chili powder ½ tsp
  • Yogurt ½ cup
  • Chopped coriander leaves 2 tbsp
  • Green chilies 2 chopped
  • Kewra water 1 tsp
Method for chicken
  • Marinate chicken with Ginger garlic 2 tsp, Salt 1 tsp, Chili powder 1 tsp, Allspice 1 tsp, Turmeric ½ tsp, Yogurt ½ cup, Orange color pinch, leave for 30 minutes, heat ¼ cup oil, put chicken on skewers and pan fry until done, give dum of coal, keep aside.
Method for rice
  • Heat ¼ cup oil fry brown onion with ginger garlic paste and chopperized tomatoes, add salt and pepper with ¼ cup water and fry well, add ¼ cup yogurt, fry well, add in boiled rice with chopped greens, top with Kewra water, leave it on dum for 15 minutes on low flame.
To assemble
  • Mix rice, remove in a platter, and serve with chicken skewers on top and kachomber on one side.

Easy Chicken Enchiladas


Whenever I cook any sort of whole roast, chicken, etc. I must get my mind around the fact that I will be eating it for the next couple of days.  I try to come up with ideas that use the ingredient in a different way so that I dont get bored eating and you, the reader, does not tire of photos of the same meal three nights in a row.  I reintroduced my previously BBQ Spice Rubbed Whole Oven Roasted Chicken as a filling in my favorite Chicken Enchilada recipe.  It may not be the most beautiful Mexican meal ever assembled (the enchiladas sort of fell apart when I removed them from the baking dish) but, as my mom used to say, its all going down the same way!  The were delicious despite, or in spite of, their messiness.  To get the recipe, please visit the Chicken Enchiladas entry from March 14.

Baked Greek Chicken

Ingredients for Baked Greek Chicken with Cracked Wheat:

2 Tbs olive oil
1/2 medium onion, finely chopped
3 large cloves garlic, finely chopped
10 oz box chopped spinach, thawed
Salt and pepper, to taste
nutmeg, to taste
3 Tbs butter
1/2 c Josephs Grainery Cracked Wheat Breakfast Cereal
1/2 c breadcrumbs
1 tsp dried oregano
4 pieces skinless, boneless chicken breast
1/2 c crumbled feta cheese

Directions: Preheat your oven to 425°. Heat 1 tablespoon olive oil in a small skillet over medium heat. Add the onion and two-thirds of the garlic and cook until softened, 3 to 4 minutes. Transfer to a bowl to cool, then add the spinach and season with salt, pepper and nutmeg. Melt the butter in the same pan, turn off the heat and add the panko, oregano and remaining garlic; toss.

Drizzle a baking dish with the remaining 1 tablespoon olive oil. Split each chicken breast across and open like a book. Stuff with the spinach and feta, letting the stuffing overflow at the edges. Place the chicken pieces in the baking dish and top with the breadcrumbs. Bake until the juices run clear, about 20 minutes.

Chettinad Kozhi Kuzhambu Chettinad Chicken Gravy

Ingredients
Chicken( chopped into pieces)-250gms
Onion big( sliced)-1
Tomato medium( chopped)-1
Kuzhambu powder-6tbsp
Turmeric powder-1tsp
Salt to taste
Cinnamon stick-1/2"
Green Cardamom-1
Cloves-3 
Coriander leaves-few

Chettinad Masala Paste ingredients-
(Grind the following ingredients to smooth paste)
Ginger-1 1/2"
Garlic-6 cloves
Coconut( shredded)-1/4cup
Aniseed/Sombu-2tsp
Cinnamon-1/4"
Clove-2

Method
Heat enough oil in a pan, when hot add the cinnamon sticks, cardamom and cloves. Fry for few mins until the aroma rises, now add the sliced onions and fry for few more mins, till the onions turns pink. Add the chicken pieces and stir fry for 5 mins. Now add the chopped tomatoes and cook until the tomatoes are mashed. Add the kuzhambu powder, turmeric powder, required salt and water. Stir well the mixture, simmer heat and cover the pan with a lid. Allow the chicken to cook for 10 mins. When the chicken is 3/4th done, add the ground masala paste, if needed add water to get required consistency of the gravy. Bring the mixture to boil and check the seasoning. When the gravy slightly thickness, remove pan from the heat and garnish with coriander leaves. Serve hot with steamed rice or chapti.

Layered Chicken Taco Salad

Well, this was the final installment of the leftover chicken from Saturday night.  Not too bad that a 4 lb. chicken gave me 3 dinners and 1 lunch including spatchcock chicken on Saturday night, cherry walnut chicken salad on Sunday night (and lunch on Monday), and last night I had this tasty layered chicken taco salad.   I think the chicken cost me just under $5.00 which made these last three dinners (and one lunch) just under $1.00 per serving plus a little extra for produce and pantry items.  Pretty good stretch of a buck!

I heated 1/2 can of refried beans with a little bit of water to loosen the consistency and a few sprinkles of chili powder, cumin and coriander.  At the same time, I heated some shredded chicken breast seasoned also with chili powder, cumin, coriander, garlic powder, salt and pepper, a few spoonsfuls of taco sauce and about 1/4 cup of water.  Once the chicken was heated through and the sauce reduced, I placed the beans in the bottom of a shallow bowl  and topped it with the chicken taco meat.  I added a layer of 1/2 cup of shredded mild cheddar to the chicken when it was still hot and let the cheese shrink and melt.  Finally, I added a 1/2 chopped tomato, chopped red onion, 1/2 chopped avocado, jalapeno slices, a dollop of sour cream and freshly torn cilantro leaves. Serve with tortilla chips and lots of extra hot sauce!

Chicken Soft Tacos

Chicken Soft Tacos
Ingredients
Tortillascooked ( click here for the recipe) – 4 nos
Gucamole (click here for the recipe) – 1 cup
Boneless chicken ( cooked and shredded) – 250 gms
Cabbage / Lettuce ( shredded) – 2 cups
Thick cream – 1 cup
Salt and Pepper to taste
Jalapenos ( chopped) – 1 no
Soft Chicken Tacos
Method
      Place cooked shredded chicken, thick cream and chopped jalapenos in a pan. Sprinkle some salt and pepper to the chicken, stir well. Simmer the chicken on low heat for 5 mins until the cream is absorbed by the chicken.
      To serve. Take an cooked tortilla, spoon some chicken mixture in the middle of tortilla, top chicken mixture with guacamole and shredded lettuce.

      Serve at once.

Chicken Fettuccine

6oz pasta
2 Tablespoons olive oil
1/2 cup chicken
2 green onions (i use 3)
1 Tablespoon butter
1/2 Tablespoon thyme
1/2 Tablespoon garlic powder
2 cups heavy whipping cream
3/4 cup Parmesan
1/2 teaspoon salt & pepper

Heat olive oil over medium heat.
add chicken and cook 7 min. Than
add green onions, butter,thyme,garlic powder,heavy whipping cream,Parmesan cheese and salt&pepper
Cook on low-med for 30 min! its that easy!

lastly:
Boil the noodles(i use fettuccine noodles). but you can use whatever- pour it over noodles when done and your ready to eat.

I got this from my mother-in-law and its actually been a favorite meal around my house. Its quick and easy. Enjoy!!
