Baked Karanjis in Diwali Blogging II

Yeah yeah - I know! Diwali is not the time for thinking healthy or doing kanjoosi with ghee, sugar and oil. But when I think of the 500 crunches I am made to do each morn, I automatically say - thanks but no thanks. And luckily I have no sweet tooth. For all the ghee-sugar lovers, there are more goodies coming in the final Diwali Blogging - III. I know youll love them. But think of the diabetics, people struggling to lose weight and yet doing their bit to enjoy Diwali - and youll love these baked Karanjis too. Its not my brainwave. Its Sanjeev Kapoors. Atleast it was telecast in his program Khana Khazana - one of the longest running series in the history of Indian television.

This recipe allows a lot of variation. While the original was stuffed with pistachios, cashews, figs and dates - I used only dried figs, dates and raisins sprinkled with cardamom powder. This is a no sugar recipe but there is plenty of natural sugar to keep you happy.

Baked Karanjis
Type: Modified Indian dessert, Sugar-free dessert, Diabetic recipe
Time taken: Around one hour - when made without mould
Makes 10 pieces



Ingredients
For outer layer
1 cup Refined flour (maida)
2 tbsps Semolina (rawa)
2 tbsps Ghee
1/4 cup Milk
For stuffing
3/4 cup Seedless dates (chopped)
3/4 cup Dried figs, (anjeer) (chopped)
15-20 Cashewnuts (crushed)
15-20 Pistachios (crushed)
1 tsp Green Cardamom Powder
1 tbsp Roasted poppy seeds (khus khus)
2 tbsps Milk
2 tbsps Ghee (melted)

Method:

1. Take refined flour in a bowl. Add semolina, ghee and milk and knead into a semi soft dough. Divide into equal portions and shape them into pedas. Keep them covered with a damp cloth.

2. Preheat oven to 180°C.

3. To make the stuffing take dates and figs in a bowl. Add crushed cashewnuts, pistachios, green cardamom powder, roasted poppy seeds and mix. Mash lightly with fingers and add a little milk.

4. Roll out a dough peda. Place it in the karanji mould. Put a small portion of the prepared filling in the hollow. Apply a little water on edges, close the mould and press firmly.Remove the excess dough and use again. Similarly make the remaining karanjis.

5. These can be made without the mould too.Place the karanjis on a greased baking tray. Brush them with a little ghee and bake at 180°C for twenty to twenty five minutes. Cool, store in an airtight container.

Modifications:
I added a pinch of baking powder to the dough. Also omitted the nuts and the poppy seeds.

I wont try to convince you that these were as good as the fried ones. But considering that the ingredients are relatively healthy and so is the baking process, the karanjis tasted good enough. Filling tasted quite sweet. Guess I should have baked them for a lesser time as the cover was quite hard.

BAKED MEATLOAF BURGERS

I love meatloaf, especially the top and end pieces that are coated with that sticky sweet glaze, dont you? As a matter of fact, picky-picky husband and I have been known to make leftover meatloaf sandwiches, using ONLY that outside saucy layer of meat.

With that in mind, I decided to try "baked meatloaf burgers" and they were a big hit; we ended up with the best part of the meatloaf in EVERY sandwich!!


1½ pounds lean ground beef (I use 90% lean)
1/2 cup chopped onion (chopped finely)
2 eggs lightly beaten
2/3 cup saltine crumbs (fine)
1/2 teaspoon salt
1/2 teaspoon black pepper
2 teaspoon chili powder
1 teaspoon ground cumin

Mix above ingredients (dont over mix) and shape into patties. Place on baking sheet that has been sprayed with cooking spray.

Brush liberally with glaze (really pile it on).

GLAZE

1/2 cup ketchup
1/4 cup brown sugar
1 teaspoon Worcestershire sauce
1 teaspoon ground DRY mustard powder
healthy pinch of black pepper
few drops of liquid smoke

Mix Glaze and brush over the patties (use all of the glaze).
Bake patties in a preheated 350° oven for 25-30 minutes or until they are cooked through (cooking time depends on how thick you make your patties).

This recipe also makes wonderful sliders on little dinner rolls. Dont try to FRY these burgers (with the sauce on them) because it will scorch and burn quickly; the sauce really transforms magically in the oven, so it is worth the effort.

SANDRAS TAKE ME AWAY CHAI TEA

I took an afternoon break
from work when
this recipe came to mind ~
Needless to say, I now often enjoy
sipping this refreshing beverage...
Yields: (4 cups)

INGREDIENTS

2 cups filtered water
2 generous tablespoons of loose black tea leaves
½” piece of fresh ginger, peeled
--(I keep mine in ½” pieces already peeled in the freezer)
1 whole cinnamon stick
2 whole cloves
½ teaspoon ground cardamom
1 vanilla bean split, and inner pods removed, or ½ tsp. vanilla extract
Dash freshly grated nutmeg
4 tablespoons honey (or click for: Sandras Homemade Fireweed Honey)
2 cups milk

METHOD

In a medium saucepan, add all ingredients except milk and place over high heat just until boiling, and then reduce heat to a simmer for 3 minutes, while occasionally stirring. Add milk and heat just prior to boiling point, and remove from heat. Strain Chai Tea through a fine mesh strainer into a 4-cup glass measuring container (as it is heatproof).

Serve hot with a cinnamon stick and a pinch of cardamom, or chilled in a tall glass filled with ice and a fresh sprig of mint.

Tip: Refrigerate any unused Chai Tea, and then reheat via your typical method and/or froth with your cappuccino maker.

American chop suey

American chop suey


Ingredients
  • Chicken breast 2 thinly sliced
  • Prawns ½ cup
  • Salt ½ + ½ tsp
  • White pepper ½ + ½ tsp
  • Corn flour 1 tbsp + 1 tbsp
  • Carrot 1 cut into Julian
  • Capsicum 1 cut into Julian
  • Cabbage 1 cup Julian
  • Onion 1 cut into Julian
  • Green onion leaves cut into 1 inch pieces ½ cup
  • Oil ¼ cup
  • Ketchup ¼ cup
  • Stock ½ cup
  • Crushed garlic 1 tbsp
  • Vinegar 2 tbsp
  • Chili garlic sauce 3 tbsp
  • Sugar 2 tbsp
  • Egg noodles 1 packet boil for 5 minutes strain and deep fry in batches till crisp
Method
  • Marinate chicken and prawns with salt and white pepper ½ tsp each, corn flour and keep aside, deep fry boil noodles in batches till crisp, keep aside. Heat ¼ cup oil fry crushed garlic till light golden, add marinated chicken and prawns with salt, white pepper, ketchup, vinegar, chili garlic sauce, sugar and stock, also add in the vegetables, cook for 2 minutes, when boiling thicken gravy with corn flour paste.
  • To serve,Spread noodles on a platter, top with gravy and 1 fried egg and serve.

Saturday Kitchen Recipe Smoked Tofu Vegetarian Pasta


This weeks "Saturday kitchen recipe" is a smoked tofu vegetarian pasta recipe and it tasted wonderful.

Vegetarian pasta is not just about vegetables as you can use tofu that will give this dish a fabulous taste. I used "smoked tofu" in this dish that combines very well with pasta.

Tofu is also very good for you and has many health benefits.

This recipe is healthy, delicious and does not take long to cook.

Ingredients for Jeenas Saturday Kitchen Vegetarian Pasta Recipe:


100g Smoked Tofu (sliced into chunks)
1 Large Flat Mushroom (diced)
1 Small Onion (sliced)
1 Tomato (peeled & diced)
1 Garlic Clove (crushed)
Few drops Lemon Juice
Olive Oil
Salt & Pepper
Fresh Parsely Leaves
Parmesan Cheese (or dairy free alternative)
Rigatoni Pasta (small pan full)

Note ...I used a smoked tofu with added chopped nuts, there are many types of smoked tofu, you can use which ever smoked tofu you can get.

Getting started on Jeenas Saturday Kitchen Recipe - Smoked Tofu Vegetarian Pasta..


Put your pasta in a small pan of lightly salted water and cook.

Take a large frying pan add some warm up some olive oil and add your tofu and onions.


Cook for a few minutes, keep stiring.



Add the mushrooms, then the tomatoes and keep cooking and stiring.



Add your crushed garlic, keep cooking and stir well.




Add some fresh chopped parsely.



Add a few drops a lemon juice (just a hint of lemon juice, too much will make it taste too much of lemons).

Add salt and pepper, go easy on the salt because you will add cheese which is salty.



Sprinkle over some grated parmisan cheese, stir well.



Now your pasta should be cooked, drain well and add to your tofu.



Add some more fresh parsely.



Sprinkle with some more parmisan cheese.



Your smoked tofu vegetarian pasta recipe is ready to serve.
