Fancy Baked Mac Feta Cheese Fırında Peynirli Makarna




















This recipe is a result of having no velveeta and yet being too lazy to go to the store.

2 cups macaroni
2 eggs
Milk, a little less than 1 cup
1 cup crumbled feta cheese
1/2 cup sliced black olives (Jen wasnt home for dinner)
1 1/2 tbsp butter or 1/4 cup oil
1/2 bunch parsley or dill
1/2 tsp black pepper
1/2 tsp crushed pepper
1/2 tsp thyme
1 cup or more grated cheese (cheddar, Swiss, etc.)

-Cook macaroni for 15-20 minutes and rinse
-Mix eggs and milk in a bowl and add feta, olives, oil, parsley, thyme, and pepper
-Add macaroni to this mix and put them in a casserole
-Put the grated cheese on top
-Bake macaroni in preheated oven (375°F) until top is crisp and golden, and cheese melts


I cannot believe Im saying this but its true: Its so much better than mac & cheese. Also Aaron thinks mushrooms would be great in this.

Ingredients for base
  • Biscuits crushed 200 gm
  • Melted butter 4 ounces
  • Walnuts finely chopped ½ cup
  • Vanilla ice cream 1 liter
  • Fresh cream 1 cup whipped
  • Ingredients for fudge sauce
  • Chocolate 3 ounce
  • Icing sugar 4 ounce
  • Coco powder 1 tbsp
  • Cream ½ cup
  • Butter 1 tsp
Ingredients for cake
  • Crush the biscuits and mix with butter and walnuts, spread in a greased 9 inch spring foam tin, press well.Soften the ice-cream and evenly spread onto crust, freeze until firm about 6 hours, pour fudge sauce over ice cream , let it set till firm.Beat cream till stiff and spread cream over cake with a pallet knife, decorate with chocolate curls.

Mushroom Fry and Mushroom Rice

Recently people are getting more aware of the medicinal properties and health benefits of edible mushrooms. If I try to list out all its values, it will take pages and pages. So I will share with you some of the very valuable properties of mushrooms and its importance in our diet. Mushrooms are valuable health food - low in calories, high in selenium, vegetable proteins, chitin, iron, zinc, fiber, essential amino acids, vitamins & minerals. They are fat free, cholesterol free and low in sodium. The U.S. Food and Drug Administration recently gave a nod to its disease-fighting capability by stating: “Diets containing foods that are good sources of potassium and low in sodium may reduce the risk of high blood pressure and stroke.” Some mushrooms supply more potassium than foods better known as sources for this mineral.
Selenium rich food will lower the risk of prostate cancer in men and breast cancer in women. Though foods of animated origin and grains are a good source of selenium but in vegetable only mushrooms is a good source of selenium. This is a good news for vegetarians whose source of selenium are limited.
They have a great effect on promoting good health and vitality. Recent studies show that mushrooms are probiotic i.e., they help our body strengthen itself and fight illness by increasing our natural resistance to diseases.
So let us increase the level of all these vitamins and minerals in our body
1. Riboflovin which gives healthy red blood cells
2. Niacin which gives a healthy skin
3. selanium –act against various diseases
By cooking more mushrooms at home.

Always buy good fresh mushrooms from reputed department stores and don’t pluck any from your garden since some mushrooms are poisonous and we don’t know how to identify the edible ones
Unlike many other vegetable which are good for health are very hard to eat because of its odd taste, mushroom is one which anybody will love to have because of its wonerful taste. They are easy to sauté and add savory flavor, texture, appetite appeal and nutrients to just about anything. The masala added blend with the mushrooms very well.
Mushroom fry and mushroom rice
Considering the health benefits of this wonder vegetable, I regularly cook this. I have tried out different recipes using mushrooms. The most easy and tasty one I have found is the mushroom fry and mushroom rice. If you want mushrooms as a side dish then you can keep it as a fry but if you just want to make variety rice out of it just mix the fry with rice cooked like we cook for fried rice. That will taste some what like a byryani and somewhat like a fried rice., This is why I call it mushroom rice.
Ingredients
Fresh mushrooms-100gms (cut into 4 pieces)
Big onion-1
Tomato-1
Ginger garlic paste-1 teaspoon
Sambar powder-2 teaspoon
Turmeric powder-1/2 teaspoon
Coriander leaves –little
Mint leaves-little
For seasoning
Cinnamon-2 small pieces
Brinji leaf-a small one
Clove-2
Cardamom-2
Fennel seeds-1 teaspoon
Green chillies-2 spitted
Mint leaves-little
Mushrooms should not be washed for a long time in water as it will absorb water. First wipe it with a soft dry towel or a tissue paper and then with a wet one. cut into pieces. cut the onions and tomatoes also. split the chilies. Keep the kadai in the stove. Season it with the items given in ‘to season’ in 1 table spoon of oil(If you plan to make mushroom rice add little extra oil).sauté the onions and tomatoes and the chillies.add ginger garlic paste and stir nicely. once the raw smell of ginger garlic paste goes add the mushroom pieces,sambar powder and turmeric powder. Sauté for 3 to 4 minutes. You will find water oozing out of mushrooms. Now add very little water (3 to 4 tablespoons) and the salt required. close the kadai with a lid. Keep the stove in medium fire. The mushrooms will get cooked within 5 minutes. So after 5 minutes open the lid and see. If there is excess water increase the flame and cook till there is not much water content.
Now the fry is ready. Garnish with coriander leaves while serving
If you plan to make mushroom rice, then cook the rice in such a way that you cook for fried rice. The rice should be cooked in such a way that they do not stick to each other.Transffer the rice to a big flat bowl and allow it to cool. Once the rice is cool add the mushroom fry little by little and mix using the backside of the ladle. For the above quantity of fry 1 cup of rice will be perfect. Add little bit of salt for the rice. Garnish with coriander leaves while serving.Children will love this rice .An easy way to give the nutrients to our kids

Dairy free vegan white frosting recipe

Ingredients for vegan frosting recipe
10oz Powdered sugar
2 Tbsp Cold water (15ml spoonfuls)
1 Tbsp Vanilla essence
1 Tbsp Agave syrup (golden or corn syrup will work)
1 Tbsp Dairy free margarine


How to make a dairy free cake frosting


Sieve the powdered sugar into a mixing bowl .

Add all other ingredients.

Mix very well adding half a tablespoon at a time until it becomes a thick and creamy paste.



If the mixture is too dry add a little water, if the mixture is too wet add a little sieved powdered sugar.

Always make sure that when more water is added that very little amounts are used at a time or else the frosting will not spread well or set.



Spread Chefs tasty dairy free and vegan frosting onto a cooled cake or other baked foods.

EASY ENGLISH MUFFINS

I have always loved English muffins; I love all of the nooks and crannies that hold creamy butter and jam or a dab of melting peanut butter. They are very easy to make and they make wonderful breakfast sandwiches (they freeze well too!!).
2 packets dry active yeast (I use 2 tablespoons)
½ cup warm water
½ cup warm milk
¼ cup canola oil
1 egg
3 tablespoons honey
2 cups all purpose flour
1 whole wheat flour
1 cup raisins
1 teaspoon salt

Mix the flours, salt and raisins together and set aside. Whisk the egg into the cold milk and then add the water, oil  and honey. Warm this mixture in the microwave for a few seconds to take the chill off (bring it to the same temperature you would for a babies bottle). Stir in yeast and let it sit for about 5 minutes.

Pour this mixture into a stand mixer (can be done by hand also) and add the dry ingredients. Knead this dough for about 5 minutes or until the dough comes away from the sides of the bowl cleanly. Cover with plastic wrap and let it sit in a warm place for an hour. Dough should double in size.
Turn dough out onto counter (I do not flour the counter) and roll to ½” thickness. Cut muffins with a 4” cutter (or drinking glass). Place each muffin on a square of wax paper to rise. This will help you transfer the muffins to the frying pan. Let the muffins raise for an hour before you cook them.
The muffins are cooked on a DRY electric frying pan (no grease) or a cast iron skillet. The recipe does not say specifically what temperature to cook them at, it just says medium low for 7 minutes each side. I have found that they cook nicely at 300° on my electric griddle. Serve warm right from the frying pan or  cool on a wire rack and then slice in half and toast.
NOTE: Since everyone’s frying pan and stove temperatures are different, I suggest you try a single muffin and see how quickly it browns before you cook the whole batch.
NOTE: Hold onto the edges of the wax paper square as you gently lift the raw muffin from the counter. Turn the muffin over and gently peel of the wax paper and gently lay the raw muffin on the griddle.

NOTE: Do not grease the frying pan, they will NOT stick. If you are worried about it, or if you dont have a good non-stick pan, you can use a light sprinkle of corn meal on the cooking surface.

Ingredients
  • Fish fillet ½ kg
  • Onions 1
  • Carrots 1
  • Spring onions 1
  • Egg 1
  • Sliced green chilies 3-4
  • Flour 1cup
  • Water 1 cup
  • Oil ¼ cup
  • Green capsicum ½
  • Red capsicum ½
  • Ginger 1
  • Garlic 3-4cloves
  • Brown sugar 1tbsp
  • Fish sauce 1tbsp
  • Black pepper ½ tsp
  • Vinegar 2 tbsp
  • Oil 2 tbsp
  • Corn flour 1 - 1 ½ tbsp
  • Salt to taste
Method
  • Wash ½ kg fish fillet and marinate with a little salt and a little black pepper.Now mix with beaten egg and coat with flour.Heat a little oil in pan, add fish fillets and shallow fry till golden brown. Remove and keep aside.Cut 1 carrot, 1 spring onion, 1 medium onion, ½ piece of green capsicum and ½ piece of red capsicum into juliennes.
  • Finely chop 3 – 4 cloves of garlic and 1 medium piece of ginger.Heat 2 tbsp oil in pan, add chopped ginger, chopped garlic and chopped onion. Fry well till onion is tender.Now add all the sliced vegetables with 2 tbsp vinegar, 1 tbsp fish sauce, salt to taste, ½ tsp black pepper, 1 tbsp brown sugar and 1 cup water.
  • Cook till it comes to a boil. Add 1 – 1 ½ tbsp corn flour dissolved in a little water. Now cook till sauce thickens. Now put fried vegetables in a serving platter, top with prepared sauce and cook vegetables. Serve hot.
